Actually, Boston had as many as five guitarists onstage. The show I saw in 2004, you had Tom Scholz, Brad Delp (for most of the show), Fran Cosmo (also for most of the show), Anthony Cosmo (Fran's son), and Gary Pihl.
And on the "more than three guitars" front, let's not forget Les 4 Guitaristes De L'Apocalypso-Bar, a great Quebecois aggregation who recorded two albums in the late 80's.
Also, there's all those country artists who always have two or three guitarists (not counting the obligatory pedal steel player, who may or may not be turned up in the mix), plus the singer usually has an acoustic guitar that he's using more as a prop than a musical instrument.
On the topic of Fleetwood Mac, I believe Lindsay Buckingham did a solo tour back in the 90's, with that included I think four guitarists besides himself.
Sonic Youth performed as a quintet in recent years, which frequently entailed them having three guitarists going at once.
On recent tours, Bruce Springsteen has had his wife Patti Scialfa, Nils Lofgren and Miami Steve Van Zandt all playing guitar, as well as himself.
And in their original lineup, Blue Öyster Cult actually had four guitarists, though typically one of them was perched up on the drum riser. One of the gimmicks of the band during the 70s was a section of the show where Albert Bouchard would come out from behind the drums, and traded solos and harmony lines with Buck, Eric, and Allen.
Then there's the Nitty Gritty Dirt Band, who had three or four guitarists in each lineup, though when they played live, I'm not sure how many of them actually guitar simultaneously, given that I think typically at least one of the guitarists doubled on drums and/or bass.
And then let's not forget King Sunny Ade, who had four or five guitarists in some lineups of his African Beats band.
And once in awhile, with the Allman Brothers Band, Gregg Allman straps on a guitar, so there'd you'd have a three guitar lineup.
Nobody has mentioned yet the greatest guitar band of all time. The Hellecasters. 3 absolute monsters on guitar.

Piper (at least when I saw them live in 1978 opening for Kiss); Billy Squier didn't have a guitar for the first couple of songs; he just sang.
When he strapped on a guitar later in the set, I figured it was just a prop but then he played some leads along with the other two
guitarists.
Al di Meola / John McLaughlin / Paco de Lucía did a couple of albums together ...
