Ween - The Mollusk
It's a tongue-in-cheek send-up of prog concept albums, but it also has some legitimately great, proggy tunes. Even the cover was done by Storm Thorgerson.
I'd say The Mollusk is a must-have for any prog fan's collection.
It Bites-Once Around The World
They retrospectively had a reputation as a prog group based on that album alone but the other two weren't very proggy.
Among Suzanne Vega's albums, it's debatable whether "Solitude Standing" or "Days of Open Hand" is the more prog one. I'd probably say DOH (no pun intended). Half of each (and probably more than half of DOH) is fairly prog, put all those tracks together and you've got a full prog album.
