Almost anything by Bob Dylan. Especially Hendrix's version of All Along the Watchtower, surely the best cover ever.
Also Shirley Bassey's version of Get This Party Started is IMO far better than the original by Pink (it wasn't written by Pink anyway).
Gimme Shelter by Grand Funk better than the Stones version by a country mile.
For me, it's Chris Farlowe's version of "Paint It Black." The orchestration is immense.

I prefer every Dylan cover ever recorded over every Dylan version, even the Dylan covers I haven't heard yet by bands I haven't yet heard of

The winner is Johnny Cash's version of "Hurt". One nobody will know it but is one of my favourites is Canadian new wave artist B.B. Gabor's version of "Big Yellow Taxi".

I first heard this song on the ID channel as the theme of a show. I just found out it's a cover of a Tears For Fears song. I like the original quite a bit but I like cover even more, probably because it's so bleak.
Johnny Cash's version of just about anything is great.
Yes' "America" is very different from the S&G original, and equally great.
