Almost anything by Bob Dylan. Especially Hendrix's version of All Along the Watchtower, surely the best cover ever.

Also Shirley Bassey's version of Get This Party Started is IMO far better than the original by Pink (it wasn't written by Pink anyway).

Gimme Shelter by Grand Funk better than the Stones version by a country mile.

For me, it's Chris Farlowe's version of "Paint It Black." The orchestration is immense.

Looking forward to my day in court.

I much prefer John Cale's cover of Hallelujah to Leonard Cohen's original.

I prefer every Dylan cover ever recorded over every Dylan version, even the Dylan covers I haven't heard yet by bands I haven't yet heard of

And here are a few more off the top of me head:

Christy Moore - Fairytale of New York
    Deep Purple - Hush
Neil Young - Four Strong Winds
    CSNY - Woodstock
Four Non-Blondes - Misty Mountain Hop
    Sterbus - Dirty Boy
    Cardiacs - Susanah's Still Alive
    Kate Bush - Rocket Man
    Sinead O'Connor - Chiqitita

Bill Frisell's cover of Madonna's Live To Tell comes to mind.

Helmut Koellen's You Won't See Me more than the original by the Beatles.

I much prefer Judy Collins' cover of Donovan's Sunny Goodge Street to the original.

The first one to come into my head was Joni Mitchell's "Woodstock" sung by CSNY

that's awesome! I love that lead singer. this is great too; I've heard it on radio but don't know who did the original (sounded like Geddy Lee on vocals on radio)

I don't know who first recorded this old standard, but I never thought much of it as a song until I heard this cover by an Australian country singer:

Okay, I found out that "What's Up" song is a Four Non-Blonds song, but I'm gonna leave it there.

The winner is Johnny Cash's version of "Hurt". One nobody will know it but is one of my favourites is Canadian new wave artist B.B. Gabor's version of "Big Yellow Taxi".

Another nod for "All Along The Watchtower", "Rocket Man" and "Hurt", and Jeff Buckley's "Hallelujah". Also, Santana "She's Not There", Vanilla Fudge "You Keep Mr Hanging On", This Mortal Coil "Song To The Siren".

I first heard this song on the ID channel as the theme of a show. I just found out it's a cover of a Tears For Fears song. I like the original quite a bit but I like cover even more, probably because it's so bleak.

Yes' "America" is very different from the S&G original, and equally great.
