If you ask me, Uli Jon Roth's best stuff was when he was in Scorpions. Tokyo Tapes is one of the ultimate double live albums, and the gaggle of studio albums that lead up to are amazing also.
Electric Sun was Uli's attempt to go more "progressive" or whatever in the 80's. THere's some cool stuff on those three albums, but the thing is, he also insisted on singing on them, and that's where it kinda falls it apart. Uli's got one of the definitive "Love it or hate it" singing voices. Man, you thought Geddy Lee was hard to take. But to me it's worth getting used to, to listen to his guitar work.
He's also done some really great instrumental records, too. And he devised his own guitar design, the Sky guitar, which allows him to climb up into the mandolin range. I believe it's been said it has the equivalent of a 40 fret fingerboard (though in upper register, the frets are spaced in whole steps, instead of half steps, so I guess you have to bend the strings to get accidentals or whatever).

i think it speaks volumes that the “released the f**king fury” skit is the only thing that i can associate with yngwie at this point – although “trilogy” did fascinate me – when i was about 17.

If only he were able to grasp the "less is more" concept I might have been able to listen to more than just Alcatraz and Rising Force to this day. The only guitar legend more frustratingly one-dimensional and predictable is Angus Young who's about as likely to play an acoustic guitar or even a non-SG as Yngwie is to not shred for 1 song.
