Funny you should say that. I never bothered with the Carpenters but one day watching a PBS special about them, Richard Carpenter talked about changing up Ticket to Ride with major 7 chords. Based on just hearing that one song, I decided to check them out and now really like them. Not a "die-hard fan" but definitely a fan.
Joe Cocker's version of With A Little Help From Friends is the only cover I'd consider better than the original.

Mother Nature's Son seems to be one of the most covered Fabs songs. John Denver did a version, quite different from the original. Whether you like it or not will basically depend on whether or not you liked John Denver.
I can't think of any Beatles covers I prefer to the originals, but I can think of a couple of Aussie covers that are definitely NOT an improvement:
(1) John Farnham - Help!.
He tries to turn it into a soul ballad, and makes it sound like a dirge.
(2) The Zoot - Eleanor Rigby
I will give them credit - they did completely re-imagine the song, and there were a lot of people who loved their heavy slightly psychedelic treatment, but basically they were just cashing in on the wave of heavy music from bands like Deep Purple, Cream, Led Zeppelin, Bubble Puppy etc.
I know songs by solo ex-Beatles don't count, but I always liked Phoebe Snow's version of McCartney's "Every Night".

A bizarre version of Norwegian Wood, by Brazilian artist Beto Guedes:
Fever Tree did a medley of "Day Tripper/We Can Work It Out", also Peter Gabriel did "Strawberry Fields Forever" on the "All This and World War II" various artists album.

Pardon me if they've been mentioned already, but I haven't seen Vanilla Fudge appear here yet... On what could easily be considered the "Ed Wood" of rock albums ("The Beat Goes On"), they did snippets of 4 Beatles songs ("I ...Hand, I Feel Fine, Day Tripper, & She Loves You"); "You Can't Do That" is included on the Sundazed disc as a bonus cut... They also did "Ticket To Ride" & "Eleanor Rigby" on their first album...
Strange that most of these suggestions are NOT prog.
