How about Gandalf? On the inner cover of Visions he is posing with a sitar.
And on the Sweet Smoke live album, there is also a sitar.

how about Hiromasa Suzuki's Rock Joint Cither with Yoko Uehara? Silk Road from 1973 was all about sitar. Karei Naru Bamyan is the only tune I can find on YT. also, US band Azigza

Scoot ahead to 28:27. The last two songs feature sitar.

He plays it on Florian. I forget which track right now, but it’s very pretty, as is that whole album.

Surprised Japanese band Kikagaku Moyo hasn't been mentioned yet. They have a sitar player, and he's featured quite a bit on their latest album House In The Tall Grass, which was one of my favorites of 2016. They're excellent live too if you get a chance to see them.

Siena Root - Live in Siegen, Germany 2011

Unfortunately, Sitarist KG West, who also played guitar and organ is no longer with the band.
