My only such letter is "x": XTC and Xhol
Even Q has four: Qango, Quags, Quantum Fantay, Queen.

I'm surprised that on a progressive music forum there are any gaps at all, as there are a myriad of strange names in every the least frequented sectors of the alphabet.
None here either. Even X has about ten - X-Legged Sally, Bernard Xolotl, Iannis Xenakis, X, X-Ray Specs off the top of my head.
I think 'O' might only be represented in my collection by three artists, though there are more than three albums:
Mike Oldfield
Opeth
Roy Orbison
Pretty sure the only x i have is Xenakis.
"please do not understand me too quickly"-andre gide
XTC
All other letters I have lots.
"The woods would be very silent if the only birds that sang were those who sang best..." - Henry David Thoreau
Just the obvious ones.
Q (none)
U (Ulver, Umphrey's McGee, the Unthanks)
X (Xera, XTC)
Y (Yo-Yo Ma, Younger Brother, Youssou N'Dour)

Gordon Haskell - "You've got to keep the groove in your head and play a load of bollocks instead"
I blame Wynton, what was the question?
There are only 10 types of people in the World, those who understand binary and those that don't.
I never heard of Quiet Sun.
Quiet Sun are a Canterbury related band featuring Phil Manzanera (Roxy Music), & Bill McCormick (Matching Mole). They only released one album. I became aware of them from 801 - Live that has RongWrong on it & featured Manzanera, McCormick, Eno, Francis Monkman & Simon Phillips. Great great live album.

It's weird that in everyday text and language situations certain letters are underrepresented e.g. J, but when it comes to band names there are loads for J....well, in my collection at least.
Jadis
Judas Priest
Jethro Tull
Bert Jansch
Jefferson Airplane
Steve Jones
Japan
Jobriath
Journey
Elton John
The Jayhawks
Tom Jones
Jean Michel Jarre
The Jam
Joan Jett
Joe Jackson
Jellyfish
Grace Jones
Also how about the foreign letters that we don't have. I've only got 2:
Änglagård
Älgarnas Trädgård
